Chunky fries with peri peri seasoning  Ingredients  6 large russet potatoes  Salt to taste  Oil for frying  1 1/2 tbsp al purpose flour  1 tsp corn starch For peri peri seasoning  1 tbsp paprika powder  1 tbsp garlic powder  1 tbsp onion powder  Salt to taste 1 tbsp dried parsley  1 tbsp oregano  1 tsp cayenne powder  1 tbsp brown sugar  1 tsp black pepper powder For spicy garlic dip 1/2 cup mayonnaise 2 tbsp chopped jalapeños 1 tbsp Sambal oelek sauce ( or you can use any chili sauce + 1/2 tbsp red chili flakes) 1 tbsp fresh garlic finely minced Salt to taste 1 tbsp black pepper 1 tbsp lemon juice Method: Cut the potatoes lengthways into thick chip sizes, cut the ends to give a nice square shape.  Parboil in a pan of salted water for  7 minutes until just tender. Drain and pat dry. In a mixing bowl add ap flour, corn starch and salt. Mix and sprinkle the flour mixture on potatoes.  Fry the chips on a medium/low heat in batches for about 5-7 minutes or until they just start to change colour. Remove onto a kitchen towel and let drain for a few minutes. Just before you are ready to serve put the chips back in the hot oil for a second fry. Fry for 2-4 minutes or until they turn nice and golden. For the peri peri seasoning:  Measure out all the herbs and spices and add to a pestle and mortar. Mix well. Once you’ve mixed the seasoning, pour it into your clean, dry storage jar and label, ready to use in your cooking. Sprinkle 1/2 tsp peri peri seasoning onto the fries.
