Quick & Easy Gumbo 
Dinner in under 30! * In a separate bowl make a quick roux: 1 cup broth + 1/4 cup flour (stir till golden) * To a pan over medium heat add olive oil, onion, bell pepper, celery, and garlic * Stir in thyme and cyanne pepper or Cajun seasoning * Add roux and stir let cook until it thickens * Add 3 cups of chicken broth * Add andouille sausage + cooked chicken * Pour in more broth if needed + a can of diced tomatoes * Simmer 15 mins * Serve over rice
