Have you heard of the trend of eating carrots every day to get tan? While carrots can change the color of your skin, it is not exactly the look you may be going for. Carotenoderma is a benign skin condition that comes from eating lots of foods rich in beta carotene. This compound is abundant in yellow-orange fruits and vegetables, like carrots, pumpkin, papaya. It is also found in broccoli & spinach, though the yellow color is masked by the green from chlorophyll in these vegetables. Eating large quanties often leads to yellow-orange discoloration in areas of the skin with a high density of sweat and/or sebaceous glands, such as the palms, soles, and around the nose. Carotenoderma is not harmful and is reversible when you cut back on the carrots. I have heard people claiming that eating a lot of carrots will cause hypervitaminosis A. This is false. The conversion of beta carotene to vitamin A is very slow, and so vitamin A toxicity is not observed from eating beta-carotene rich foods. If this trend gets you excited to eat more produce, that is a good thing.
