Herb butter dipped radishes to celebrate the start of spring! A take on the classic French combo of peppery radishes and salted butter. Super fresh, crunchy and really fun to eat 🌿 3-4 tsp homemade herb oil: 2 cups of tender herbs (packed), ⅓ cup olive oil 100g unsalted butter, cubed 20-25 radishes, washed and dried 1 Tbsp flaky sea salt ½ tsp chili flakes - To make herb oil: Bring large pot of salted water to a boil and fill a large bowl with ice and cold water. Quickly blanch herbs in the boiling water (about 10 seconds) and then plunge into the ice bath. After a few minutes, use a clean tea towel to squeeze as much water as possible from the herbs. Add to a blender along with the olive oil and blend until smooth. Strain over a cheesecloth-lined strainer and let sit. It can take a few hours for the mixture to strain completely but you only need a few tsp for the herb butter which will take 30 minutes or so. Use any leftover oil for your eggs in the morning, drizzled on avocado toast, etc.  - Once you have enough oil, pop the butter cubes into a small bowl or cup. Microwave in 5-10 second intervals, stirring in between each one, until the butter has the consistency of melted white chocolate. It took me about 40 seconds total. - Stir in a few teaspoons of oil until you reach your desired colour. - Mix salt and chili together in a small bowl.  - Dip each radish into the butter and place on a parchment-lined baking sheet. Sprinkle generously with salt. Chill for 15 minutes before serving.
