VEGAN MANGO HABANERO FRIED MUSHROOMS 🌱😋 These vegan mango habanero mushrooms are something special! After scrolling through IG to find a new meal idea, I decided to try the recipe from @Lloyd Rose and replaced the oyster mushrooms with enoki mushrooms. It’s the perf plant-based twist on a comforting classic!  Ingredients: 300g enoki mushrooms Garbanzo flour @JUST Egg  Garlic powder Onion powder Salt Black Pepper Smoked paprika Cayenne pepper Oil for frying Parsley for garnish For the wet mix: 1/2 cup of just egg 1 tbs of garlic & onion powder 1 tsp of paprika, pepper and hot sauce 1/2 tsp salt  1/2 cup garbanzo flour 1/4 tsp cayenne pepper For the dry mix: 2 cups garbanzo flour  2 tbs garlic & onion powder 2 tsp of paprika & black pepper  1 tsp salt 1/2 tsp cayenne pepper  Mango Habanero Sauce: 3/4 cup mango nectar ( or juice) 1 1/2 tsp habanero sauce 2 tbsp brown sugar 1/2 tbsp white vinegar 1 1/2 tbsp vegan butter Salt & pepper to taste   Instructions: 1️⃣Clean your mushrooms. Mix the ingredients for the wet mix. Add water to loosen the mix, no more than 1/2 a cup. Add your mushrooms and make sure they are coated with the mix. Set aside. (if you really want the flavor to pop, allow the mushrooms to marinate for 2+ hours in the mix)  2️⃣Mix your  ingredients together for the dry mix. Heat your frying oil in a frying pan over medium heat. Once the oil passes the water check (iykyk), take your mushrooms from the wet mix and coat them in the dry mix. Be sure and shake the access flour off.  3️⃣Add your coated mushrooms to the frying oil. I suggest cooking 2-3 at a time. Cook on both sides for about 7 minutes or until golden brown. Rest your mushrooms on a wire rack to allow the excess grease to drip off.  4️⃣Combine ingredients for sauce in a pot. Simmer and reduce for ten minutes then let cool.
