Recipe: Ingredients: 6 pieces of chicken breast, cut to small cubes 1 shallot, finely chopped 4 Campari tomatoes, chopped 1.5 teaspoons of salt 1/2 teaspoon of black pepper 1 heaping teaspoon of paprika 1 teaspoon of garlic powder 1 heaping teaspoon of Baharat spice 1/3 cup of extra virgin olive oil 1/4 cup of date syrup 1/2 cup of tomato sauce 2 cups of basmati rice, washed and drained 4 cups of boiling water Garnish: 1/4 teaspoon of Maldon flaky salt and chopped parsley Method: 1. Preheat the oven to 420F / 220C. 2. In an oven safe pan place the chicken breasts cubes. Add the rest of the ingredients except for the rice and water. 3. Mix it all together. You can marinate it overnight for additional flavor. 4. Add the rice and mix it. Pour 4 cups of boiling water. Stir it a bit with a spoon. 5. Cover with wet parchment paper and aluminum foil. 6. Bake in a preheated oven on 420F for 45 minutes. Remove the cover and bake for 10 more minutes. 7. Transfer the oven to convection broil on 450F and broil/grill for 5-7 minutes to get a nice golden crust. 8. Garnish with a bit of Maldon flaky salt and chopped parsley. Enjoy!
