It’s not rocket science…. The room temp water is slowly decreasing the frozen temperature while keeping it cool enough to still be fresh

You shouldn't defrost smthg which is vacuum sealed without at least piercing the plastic to let the air in.

Also it’s very important to never defrost/ or use room temperature in the original vacuum sealed bag. It can cause Botulism! The vacuum-sealed bag removes oxygen, but if the temperature rises (like at room temperature), the bacteria can become active, multiply, and produce the toxin.

I will decide what I am gonna cook the day before and take it out of the freezer I'd put it in the fridge to defrost by the time I am going to cook dinner the next day it's already defrosted

Chef here! Here’s a tip! If you just leave it in the skink and just have the cold water trickle over the bowl of frozen meat it will defrost faster!

I mean, I normally just fill half my sink with warm water and leave my frozen meat in there for a bit... Isn't this how everyone does it?

Science!! Even though the water is cold, it’s warmer than the frozen chicken and heat travels from the warmer thing to the colder thing, therefore taking the cold water and giving its “warmth” to the frozen chicken and thawing it!
