Follow me @marjanimoore for easy & delicious recipes that will keep you fueled and motivated! ๐ค Macros: Calories: 476kcal | Carbohydrates: 35g | Protein: 43g | Fat: 18g | Fiber: 5g Itโs THAT good youโll eat it day after day after day.ย ย โผ๏ธ๐คค๐โผ๏ธ Makes 3 Servings ๐ฅ๐๐๐๐๐๐๐๐๐๐๐: 1 cup rice of choice (save cooking liquid) ๐ 1 lb lean ground beef ๐ฅฉ 1 green bell pepper, finely diced ๐ซ 1 red bell pepper, finely diced 1 small zucchini, quartered and sliced ยฝ medium onion, finely diced ๐ง 4 cloves garlic, minced ๐ง 1 tsp sea salt ๐ง 1 tsp fresh ground black pepper 1 tsp garlic powder ๐ง 1 tsp onion powder ๐ง ยฝ can (8oz) tomato sauce ๐ฅซ ยฝ can (14.5 oz) diced tomatoes ๐ฅซ 2 tbsp Worcestershire sauce ยพ cup shredded mozzarella (or vegan mozzarella if dairy-free) Salt and pepper, to taste ๐ ๐ฅฃ๐๐๐๐๐๐๐๐๐๐: ย ย ย โขย ย ย ย Cook Rice: Cook preferred rice according to package in water or broth (I usually use Minute Brown or Jasmine Rice in the microwave) ย ย ย ย โขย ย ย ย Cook Meat: In a large deep non-stick skillet over medium heat, when hot, add in the ground beef, salt, pepper, garlic powder, and onion powder. Break the ground beef into small pieces as it cooks. Cook for about 4-5 minutes or until just barely cooked through (stir occasionally). ย ย ย ย โขย ย ย ย Add Veggies: While the meat continues to cook, add in the diced bell peppers and diced onions to the same pan and cook for about 3-4 minutes, stirring occasionally, until beginning to soften. Then add the minced garlic and sliced zucchini and cook for an additional 2 minutes. ย ย ย โขย ย ย ย Add in Sauce: Next, add the tomato sauce, worcestershire sauce, diced tomatoes, and salt & pepper (about 1/4 tsp each). Reduce the heat to low and cook for an additional 3-4 minutes, letting it bubble and simmer, stirring occasionally. Add additional salt & pepper to taste. ย ย ย โขย ย ย ย Assemble: Lastly, divide the rice evenly between meal prep containers. Portion the saucy meat/pepper mixture into each meal prep container and add a generous sprinkle of cheese (or vegan cheese) on top.
