Carbonara is from the region “Lazio”, you are in Capri which is in the region “Campania”, so if you liked that carbonara imagine the original version from Rome! When you are in Italy you should always try to eat “regionally”, so find the typical food from the region you are in and stick to those! Campania has such good food, including the neapolitan version of pizza (there is also a roman type that i personally prefer)

Unfortunately you probably went to a tourist trap, we don't usually eat the caeser salad in Italy and the carbonara is made with guanciale which is pretty different from bacon (that looks like bacon) and most importantly we don't put parsley in it but I'm glad you enjoyed it anyway
