Ingredients 2 cups (250g) all-purpose flour (spooned and leveled), plus extra for dusting 1/2 cup (100g) granulated sugar 2 1/2 tsp (10g) baking powder 1 tsp (2g) crushed freeze dried strawberries 1/2 tsp (3g) salt 1/2 cup (113g) unsalted butter, frozen 1/2 cup (120ml / 120g) buttermilk or heavy cream, plus 2 tablespoons (30ml / 30g) for brushing 1 large egg (50g) 1 1/2 teaspoons (6g) pure vanilla extract 1 cup (140g) fresh or frozen strawberries (do not thaw if frozen) Coarse sugar, for topping Vanilla icing, for drizzling Instructions 1. Mix Dry Ingredients: - In a large bowl, whisk together the flour, sugar, baking powder, and salt. 2. Grate Butter: - Using a box grater, grate the frozen butter and add it to the dry ingredients. Toss to coat, then use a pastry cutter, fork, or your fingers to work it in until the mixture resembles coarse crumbs. - add the crush freeze dried strawberries. 3. Combine Wet Ingredients: - Add the buttermilk or cream, egg, and vanilla Bourbon paste. 4. Bring Dough Together: - Pour the wet mixture over the flour mixture. Add the blueberries and gently stir until the dough begins to come together and looks moistened. Shape the Dough: - Transfer dough onto a lightly floured surface. With floured hands, shape it into a rough ball (it will be sticky). If needed, add a little more flour or cream. Press into an 8-inch (20cm) disc and slice into 8 wedges using a sharp knife or bench scraper. 5. Chill the Scones: - Brush the tops with the extra cream and sprinkle with coarse sugar. Place on a plate or lined baking sheet and refrigerate for 15–20 minutes while the oven preheats. Chilling helps prevent spreading and creates a flakier texture. 6.
