Strawberry Mochi 🍓🍡 For Mochi Dough: * 1 cup glutinous rice flour * 1 cup milk * 1/4 cup white sugar * 1/2 cup cornstarch (for dusting) * 20g unsalted butter 1. In a non-stick pan over medium heat, combine the glutinous rice flour, milk, and sugar. 2. Stir constantly as the mixture begins to thicken. Once it starts to firm up, add 2 tablespoons of unsalted butter and continue mixing until smooth. 3. Remove the pan from heat and stir until the butter is fully incorporated. 4. For the Strawberry Cream: * 200g double cream * 2 Tbsp sugar * 2 tbsp strawberry jam 1. Whisk the double cream and sugar together until stiff peaks form. 2. Gently stir in 2 tablespoons of the homemade strawberry jam. 3. Transfer the strawberry cream into a piping bag.
