The chemicals used to grow the wheat can also effect your gut. Some farmers sow wheat that is covered in mouse bait to stop it from being eaten by mice. Highly recommend that you buy organic wheat if you can afford it or buy a home mill and mill wheat at home just before using it for even more nutrition.

This is not exactly correct. Sourdough was replaced by Barm which was the yeast from brewers foam in the Middle Ages. Barm is what was replaced in the late 1800s. Barm is also great yeast just hard to produce fresh these days.
