Grilled Shrimp with Chimichurri Sauce Ingredients: 1 lb large shrimp, peeled and deveined 2 tablespoons olive oil 1 teaspoon smoked paprika 1/2 teaspoon garlic powder 1/2 teaspoon salt 1/4 teaspoon black pepper For the Chimichurri Sauce: 1 cup fresh parsley, finely chopped 1/2 cup fresh cilantro, finely chopped 3 cloves garlic, minced 1/4 cup red wine vinegar 1/2 cup olive oil 1/2 teaspoon red chili flakes (optional) Salt and pepper, to taste Directions: Preheat your grill to medium-high heat. In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, salt, and black pepper until evenly coated. Thread the shrimp onto skewers (if using wooden skewers, soak them in water for 20 minutes beforehand). Grill the shrimp for 2–3 minutes per side or until they turn pink and slightly charred. Remove from heat and set aside. To make the chimichurri sauce, combine parsley, cilantro, minced garlic, red wine vinegar, olive oil, and red chili flakes (if using) in a bowl. Stir well and season with salt and pepper to taste. Drizzle the chimichurri sauce over the grilled shrimp or serve it on the side for dipping.
