The gravity pulls the water to the center of the earth. Not “down”. You can’t think of south as down. Down is towards the center of the ball. All things move towards the center and land just stops it.

Gravity pushes towards the center of the earth on the inside, so everything just stays on the ground where it is. Gravity wouldn’t point south since the 4 directions (north east south west) are on a 2D plane, it would be inwards towards the middle to make it 3D.
