Have u tried teff, sunchokes, bamboo shoots (fresh not canned) and okra? The reason im asking about these are because these foods are like different and i think some of these might be safe for u to eat. Teff is an annual grass native to ethiopa, it’s a nutrient rich, gluten free grain. It’s basically small seeds like chia, water lily seeds which u tolerate. But it’s starch heavy so if ur gut doesnt tolerate starches well it could cause bloating. Needs to be cooked very plainly. Has a mild nutty flavour. Sunchokes are tubers but chemically different from potatoes. They’re rich in inulin (prebiotic fiber) which can cause gas in sensitive guts, you’d start with a tiny cooked portion. Texturally similar to water lily seeds and zucchini. Bamboo shoots (fresh not canned) are very crunchy, mild, watery vegetables, like zucchini or cucumbers. Low histamine, not fermented unless proccessed. It must be cooked properly tho to remove natural toxins, dont eat raw or canned. Okras are very fresh, watery, ”slimy” texture. Provides good amount of fiber and it’s low in histamine. I would defintely recommend trying okras and bamboo shoots, teff and sunchokes can be a bit more experimental so u should have medical attention while trying. The reason i’m saying this is because my sister also has the same condition as u and these foods work for her.
