Nutella Brownie Pudding Skillet This Nutella brownie pudding skillet technically feeds 4–6… but if you and your Valentine choose to commit to it, I won’t tell. The crackly brownie-pudding top, melty Nutella center, and almost-fluffy chocolate situation make this one impossible to resist. Eat it warm, straight from the skillet, with vanilla ice cream and extra Nutella. Save this one, it’s dangerous. Recipe below or on my Substack (link in bio)! Ingredients ½ cup (113 g) unsalted butter 4 oz (113 g) semisweet chocolate chips  ¾ cup (150 g) granulated sugar ¼ cup (55 g) light brown sugar 3 large eggs, room temperature 1 tsp vanilla extract ½ tsp salt ½ cup (65 g) all-purpose flour 2 Tbsp (14 g) Dutch-processed cocoa powder ¾ cup (222 g) Nutella, divided -½ cup for layering -¼ cup for topping Instructions Generously butter a 10-inch cast-iron skillet.
Preheat oven to 425°F (220°C).
In a heatproof bowl, melt butter and chopped chocolate together until smooth.
Let cool slightly, warm but not hot. Do this first so it can cool while you beat the sugar and eggs. 
In a large bowl, combine granulated sugar, brown sugar, and eggs.
Using a hand mixer, beat on high for 10 minutes until: Pale and thick, glossy, and batter falls in thick ribbons. 
Slowly whisk the warm chocolate mixture into the egg mixture.
Add vanilla.
Sift in flour, cocoa powder, and salt.
Gently fold into the batter just until combined. Do not overmix.
Pour half of the batter into the skillet and spread very gently.
Warm Nutella for 15–30 seconds until pourable.
Drizzle ½ cup Nutella evenly over the batter, stopping about 1 inch from the edges.
Gently scoop remaining batter over the Nutella and spread lightly, do not swirl together. 
Bake at 425°F for 8 minutes.
Reduce oven temperature to 325°F (165°C) without removing the skillet.
Continue baking 8–10 minutes, until: Edges are set, top is glossy and firm, and the center jiggles. Do not overbake. 
Remove from oven and rest 5–10 minutes. To Serve Top with vanilla ice cream, drizzle with remaining Nutella, and finish with flaky salt if desired.
