Coconut Chicken Curry, one of my favoriteeee Fall recipes. Because yes, it’s been feeling like FALL in Wisconsin and I’m so here for it!!!! This is also one of the best recipes to make for a newly postpartum mama. Filled with nutrients so great for healing after delivery! Ingredients: 1 onion 1 red & 1 green bell pepper (cut into strips) 1 cup 2 inch chopped green beans 2 minced garlic cloves 2 tablespoons fresh grated ginger 1 tablespoon coconut oil 2 table spoons curry powder 1 tsp salt 1 can full fat coconut milk (or heavy whipping cream) 20-30 oz bone broth 16 oz shredded chicken (I put breast in the instapot to shred or you can do rotisserie!) 2 limes 3-4 cups spinach Directions: Chop up all veggies Sauté onion in coconut oil until translucent Then add all other veggies + curry powder and salt. Sauté for about 5 minutes Add coconut milk, bone broth, and shredded chicken. Cover and let simmer for 10-15 min Add juice from 2 limes and mix Remove from heat and stir in spinach to wilt. Serve over rice or with fresh sourdough :)
