Healthier carrot cake🥕 Perfect for the holidays😋 Cake: * 2¼ cups whole wheat pastry flour (or half white, half wheat) * 2 teaspoons baking powder * 1 teaspoon baking soda * 3 teaspoons cinnamon * ½ teaspoon nutmeg * 1 teaspoon sea salt * 2 eggs * ½ cup applesauce * ½ cup maple syrup or honey * ½ cup almond milk, at room temperature * ½ cup melted coconut oil * 2 teaspoons vanilla extract * 2 cups finely grated carrots Cream cheese frosting: * 4 oz cream cheese * Honey * Lemon juice (optional) * Preheat the oven to 350°F * In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt. * In a medium bowl, whisk the eggs and then whisk in the applesauce, maple syrup or honey, almond milk, coconut oil, and vanilla. Stir in the carrots. * Pour the wet ingredients into the bowl of dry ingredients and stir until just combined. * Pour the batter into a greased baking dish and bake for 35 to 38 minutes, or until a toothpick comes out clean. Let the cake cool completely before frosting. * In a large bowl, beat the cream cheese and honey with an electric mixer until smooth.
