Yea, actual chef here... No restaurant uses stainless steel to cook steaks. They all use cast iron, either on a grill, griddle, pan or broiler.

Japanese steakhouses cook over grills and fire. They do not use stainless steel pans. They usually cook your steak just a few feet away from you because the restaurants are so small.
