crispy shallot garlic mashed potatoes 🧄🧅 makes 4 servings good rule of thumb is about one medium sized potato per person! ingredients: 4-5 medium sized gold potatoes 1/2 cup milk 1/2 cup heavy cream 3 tbsp butter 1-2 tbsp garlic oil (depending how garlicky you want it) 1 large shallot sliced thinly 1/2 cup neutral oil for frying shallots salt to taste chopped fresh parsley for garnishing (optional) 1.Bring a pot of water to a boil. Peel your potatoes and cut into 2 inch cubes and throw into the pot once the water is boiling. Boil for ~15-20 minutes, or until potatoes are fork tender and almost fall apart a bit. 2.Slice shallots into thin rings. Heat up a small skillet with neutral oil and fry the shallots in batches, making sure not to overcrowd the pan. Once they are golden, remove, and place on a paper towel lined plate to soak up excess oil. 3. Press your boiled potatoes through a mesh strainer with a spoon to make them ultra silky. Skipping this step won’t alter the taste but if you want them super silky don’t skip. 4. In a small saucepan, heat up milk and cream on low heat for 3-4 min. You don’t want to simmer the milk, just warm it up. 5. Add the milk mixture in batches into the mashed potatoes, along with the butter and garlic oil, and mix with a wooden spoon or silicone spatula. Season with salt to taste. 6. When ready to serve, top with crispy shallots, parsley, and an extra cube of butter! #mashedpotatoes #thanksgivingdinner #holidayfood #thanksgivingrecipes #EasyRecipe
