Heat 1 tbsp olive oil in a large oven-proof skillet over medium-high heat. 	•	Sear the lamb racks, fat-side down first, until golden brown (about 2–3 minutes per side). 	•	Transfer to a plate to cool slightly. 	3.	In a small bowl, mix breadcrumbs, garlic, rosemary, thyme, Parmesan,  salt, pepper, and 1 tbsp olive oil. 	4.	Brush Dijon mustard on the lamb (this helps the crust stick and adds flavor). 	•	Press the breadcrumb mixture onto the lamb’s fat side. 	5.	Preheat oven to 400°F (200°C). 	•	Place the lamb racks, crust-side up, on the skillet or a roasting pan. 	•	bake  for 18–22 minutes for medium-rare (internal temp: 125–130°F). 	•	For medium,  about 25 minutes. 	6.	Rest the lamb for 10 minutes before slicing into individual chops. (I stood the two racks upright, leaning them against each other in a triangle shape.
