@our_cookingjourney: This one’s for you @Stanley Tucci 🙌 This beautiful pasta dish from Nerano on the Amalfi Coast is one of Stanley’s favourites for a good reason! All you need is a few simple quality ingredients to make something truly delicious. This is my version of Spaghetti alla Nerano. The deep-fried courgette with the fresh basil, cheese and delicious garlic oil make for a beautiful rich, creamy pasta. Traditionally it’s made with provolone del Monaco but this is tricky to find so I’ve used a combination of pecorino and Grana Padano cheese. And if you want to make it vegan, just leave out the cheese, add a squeeze of lemon juice towards the end and top it with aromatic pangrattato. This is Italian cooking at its very best and is perfect for this time of year. You have to make this one! Here is the ingredients list 👇 Or you can find the full written recipe on my website (link in bio) Serves 2 200g spaghetti 4 small courgettes (in a mix of colours) 2 garlic cloves 15g basil 70g pecorino 70g Grana Padano Extra virgin olive oil Freshly ground black pepper Fine sea salt #amalficoast #cheese #italianfood #cooking #pasta
This looks amazing but I won’t discard the garlic no matter what you say

Sorry. This has zero nutritional value. Let’s not forget that that’s the main purpose of eating

People in the US say that food in Italy has no flavor and is overrated. That’s because they’re used to all their food being filled will Sugar, Salt, Fat and preservatives 🙄🙄🙄

Have to ask. Nearly every dish consists of garlic, basil, olive oil. There really is minimal difference in all the dishes

The entire cruisine of Italy: pasta, tomatoes, olive oil, cheese. Chnage a bit of seasoning here and there, but that’s literally it.

Zucchini is such an underrated vegetable. Pasta alla Nerano is one of my favourite things. The addition of anchovy as a seasoning is inspired. I'm going to Ischia on Monday and I am really hoping to find a restaurant that serves this 🥰🥰🥰

Can we talk about the anchovy oil that is made in that region? I don’t see any talks about it and it is the most fantastic thing I’ve ever eaten. I was on the Amalfi Coast last September and oh my God it was so good!
