Lemon chicken meatballs + creamy rice: Steps: 1. Preheat oven to 400 2. Dice up 1 whole white onion and mince 6ish cloves of garlic 3. Sauté onion over med heat for 5 min until translucent 4. Add garlic and stir for 1 min 5. Add 1.5 cups rice (i like the Right Rice brand) and let toast for 5 min 6. Add 1.5 cups chicken or veggie broth 7. Add .5 can coconut milk 8. Add juice of 1 lemon and stir to combine. 9. Cover and let sit for 15-20 min until rice is cooked. FOR MEATBALLS: 10. While rice is cooking, make meatballs with 1 lb ground chicken or turkey. 2. Add zest of 1 whole lemon, salt, pepper, oregeno, basil to taste 3. Combine and make meatballs 4. Place on baking sheet and cook at 400 for 25 min. 5. Once rice is done, add in as much spinach as you like and mix in until its wilted. 6. Add back in cooked meatballs to the pan and add extra lemon juice!
