@feastandfairways: Perfectly cooked filet mignon in a stainless steel pan! I seriously have not gotten a better crust on my steaks in any other pans. Ingredients - filet mignon - Salt and pepper to your likely - High smoke point oil like avocado oil. I only use about 2 tbsp - 4-5 tbsp butter - 4-5 garlic cloves crushed - Rosemary and thyme Recipe: - let your steaks come to room temp and then coat them in a light layer of avocado oil. - Salt and pepper on all sides to your liking - Heat your stainless steel pan over medium heat for about 5 minutes - After 5 minutes, toss a small amount of water into the pan. If it beads, your pan is ready. DUMP THE WATER OUT AFTER. - Add 2 tbsp avocado oil and make sure it’s evenly coating the bottom of the pan - Lay down your steaks and press them firmly down. Do not move them or try to. Let them cook for 2 minutes and once you can wiggle the pan and the steaks move, flip to the other side and cook for 2 minutes. Then sear on all sides for 30 seconds if you can. - Remove the steaks from the pan and turn the heat to low. - Immediately add your butter, herbs, and garlic. Once the butter melts and is bubbling. Add back in your steaks and baste for 30 seconds on each side. - Once you’ve reached an internal temp of 120-130 for medium rare to medium, remove and rest for 5-10 minutes before cutting.
