These are perfect for when you have guests over or even just as a treat for yourself 😋 #econofoods #competition #cheesecake #tacos #dessert #blueberry 3 large Tortilla Wraps (makes about 9-12 rounds) 1 cup crushed Tea Biscuits of choice ¼ cup FoodLand Butter, melted For the Cheesecake filling 1 cup Cream 1 cup Lancewood Cream Cheese, softened 1 tsp Vanilla Essence 1/4 cup Liberty Icing Sugar Topping 1 cup Früt Blueberry compote (see previous post for recipe) 1. Pre-heat oven to 180°C. 2. Cut 3-4 rounds out of each Tortilla Shell with a small bowl, cup or cookie cutter to get about 9-12 shells. Dip each into melted Butter then coat in Cookie Crumbs. 3. Flip a muffin tin upside down. Place the tortilla pieces in-between muffin cups. Bake 10 minutes until just golden brown. Let cool on the pan to keep their shape. 4. Beat Cream Cheese with Icing Sugar until the mixture is light and airy. 5. In a separate bowl beat the Cream and Vanilla for 2 minutes, using medium speed, until it thickens and stiff peaks form. 6. Fold the Cream Cheese mixture carefully into the whipped cream. Chill in the fridge for 30 minutes. 7. Fill the Taco shells with Cream Cheese filling and top with 1/2 tsp Blueberry compote. Enjoy!
