You can swirl the pan occasionally to help it melt evenly. The sugar will clump up first, then start to melt into a liquid. * Once the sugar is completely melted and has turned a deep, amber color (like an old penny), immediately remove the pan from the heat. * Carefully and quickly whisk in the butter, one cube at a time, until it is completely melted. The mixture will bubble vigorously. * Slowly and carefully whisk in the heavy cream. The mixture will bubble up again. Whisk until it is smooth and no clumps of sugar remain. * Stir in the salt, if using. * Pour the caramel into a heatproof jar or container. It will thicken as it cools. Store in the refrigerator.
