@geris.kitchen: Cajun Chicken Pasta Serves 2 For the chicken: 2 chicken breast flattened or escalope Salt & pepper 1 cup Panko bread crumbs 1/2 cup flour 2 eggs beaten Oil for frying For the sauce: 140g pasta bows Knob of butter 1 cup chestnut mushrooms cleaned and sliced 1/2 yellow bell pepper diced 1/2 red bell pepper diced 1/2 green bell pepper diced 1/2 brown onion diced 3 garlic gloves chopped 1 cup pasta water 1 cup cooking cream 1 tbsp flour 2 tbsp Cajun spice Handful chopped parsley 1/2 cup fresh Parmesan cheese 1/2 tsp black pepper 1/2 tsp salt (taste sauce before adding at the end as the cheese can be salty enough.) Method: 1. bring a pot of water to the boil and add some salt and the pasta until cooked. 2. As the pasta is cooking, heat a sauce pan, add the butter and a little olive oil to sauté the mushrooms. 3. Add in all of the peppers, onion and garlic. Cover with lid and cook over low heat until soft. 4. Add the Cajun spice, flour and black pepper. Stir through. 5. Pour in the pasta water, cream, cheese and parsley. Cover with lid and Simmer over low heat. 6. Season the chicken with salt and pepper then coat with the flour shaking off any excess. Transfer to the egg then the bread crumbs. Press the bread crumbs into the chicken to ensure they are well coated. 7. Heat the oil and fry the chicken until golden. Cut into strips. 8. Drain pasta and add Into the sauce and mix well. 9.
