Here's a simple and delicious Karachi-style chicken biryani recipe using LAXMI extra long basmati rice. Ingredients: * 850 g chicken  * 1 tbsp ginger garlic paste  * 1/4 cup oil, 2 tbsp ghee  * 2 medium potatoes  * Salt to taste or 1.5 approx  * 1 tbsp red chilli powder  * 1/2 tsp turmeric powder  * 1 tsp cumin powder  * 1 tsp garam masala powder  * 1/4 tsp nutmeg powder  * 1/4 tsp mace powder  Whole Spices: * 1 tsp cumin seed * 1/4 tsp black cumin seeds  * 6-7 green cardamom  * 5-6 cloves  * 7-8 whole black pepper  * 2 bay leaves  * 2 star anise  * 2 cinnamon sticks  For the rice: * 4 cups basmati rice @LAXMI * 2 tbsp salt  * 1/2 tsp vinegar or lemon juice  * 2 tsp oil Green Masala: * 1/2 cup chopped coriander  * 2 tbsp mint chopped  * 1/2 cup fried onion  * 2 medium tomatoes  * 7-8 dried plum * 7-8 green chillies * 1 tsp chaat masala powder  * 1/2 tsp orange food colour * 1/2 tsp yellow food colour  * 1 tsp kewra water  Final layer: * 2-3 tsp desi ghee  * 1/2 tsp garam masala powder  Instructions: * Prepare Rice: Rinse the rice until the water runs clear. Drain and soak the rice in water for 30 minutes. * Cook the chicken: Heat oil, add chicken, ginger garlic paste and cook for 2-3 minutes on high heat. Add whole and powdered spices. Then add 1 cup of water, potatoes and cook the chicken until 80 % done.  * Bring to a boil 3-4 litres of water, add salt, oil and vinegar. Add soaked rice and cook until 50% is done. * Assemble the Biryani: Spread green masala over the chicken. Add food colour and kewra water. Spread half of the 50 % cooked rice over the chicken. Cover the lid, high heat and cook for 5 minutes. Remove lid and cook on high heat for another 5 minutes. Then add 80% cooked remaining rice followed by desi ghee and some garam masala.  * Dum cooking: Wrap lid with tea towel and cover the pot with some heavy weight and cook over low heat for 10-12 minutes.  * Serve: Turn off the heat and let the biryani rest for 5 minutes.
