Preheat oven to 400F. Add cooked and cooled rice to a baking sheet. Toss well with the sesame oil and seasonings. Bake for 25-30minutes, tossing half way through (just watch to make sure it doesn't burn). While the rice is in the oven, make the dressing. Add all of the ingredients to a bowl and whisk until smooth. Taste and adjust seasonings as needed. Next, chop/slice all of the ingredients for the salad and add to a large bowl. Top with the crispy rice. Pour the dressing over the salad. Toss and enjoy!
