GARLIC STEAMED ARTICHOKES 🌿 Save this recipe! Though commonly thought of as a vegetable, artichokes are actually a flower bud 🌼. A relative of the famous milk thistle, artichokes stimulate bile flow, which helps to carry toxins out of our body. Artichokes have been used as an indigestion remedy in Europe for more than a century. One artichoke contains about 25 percent of our daily fiber needs and 16 essential nutrients, including vitamin C, potassium, folic acid, calcium and magnesium. Drain well, discarding the garlic, and dry the artichokes by squeezing gently in a clean kitchen towel. 5. Enjoy pulling off the leaves one at a time and dipping them in the sauce (recipe below). Remove the “chokes” (the hairy center) and discard. Marinate the hearts in the rest of sauce or add to your next salad. FOR THE HEART-HEALTHY DIPPING SAUCE: 1/3 cup extra virgin olive oil 🫒 1 clove garlic, minced 2 Tbsp raw apple cider vinegar 2 Tbsp organic apple cider (or unsweetened apple juice) 🍎 1 tsp raw liquid honey or coconut nectar 🍯 1 tsp Dijon mustard 1 tsp dried basil 1/2 tsp dried oregano 1/4 tsp pink rock or gray sea salt Add all the ingredients to a blender, and blend on high speed until emulsified. This sauce is so tasty that you can use it to flavor any steamed greens, not just artichokes.
