“American BBQ” as a national pride symbol is an appropriated identity. It’s a food born out of colonization, slavery, and cultural mixing on Indigenous/Mexican land.
The U.S. did what it often does: took a tradition, renamed it, nationalized it, and erased the origins in order to create a narrative of something “uniquely American.”

When the Spanish arrived in central Mexico in the early 1500s, they documented the Aztecs cooking meat (such as turkey, deer, and later sheep or goat) in pits dug into the ground. The meat was slow-cooked over heated stones, wrapped in maguey (agave) leaves, which kept it moist and flavorful. This style of pit-cooking was deeply tied to ritual feasts and community gatherings.
The Spanish word “barbacoa” itself likely came through the Caribbean Taíno word barbacoa, meaning a wooden framework or structure for cooking. But the Aztecs (and other Mesoamerican peoples) had their own distinct pit-roasting traditions long before contact. Over time, these traditions merged, and barbacoa became the slow-cooked, smoky dish we know today.

Mexico is not the origin of BBQ,, it spread wherever the Spanish colonized. It originated in the Caribbean. Also, I have never heard anyone from Texas say it started there, they just claim there's is the best.
