Pistachio Cannoli  Growing up, my Mum made the BEST custard Cannoli. Only up until my recent trip to Europe did I try traditional Ricotta Cannoli and I WAS IN LOVE! So here is my recreation, with a beautiful Nutty Pistachio touch 🤗 With Cannoli, the filling is the star of the dish, so it is recommended to use good quality Ricotta. @lacasadelformaggio Ricotta is always my go to and never disappoints.  💌 Save this recipe for your next get together, or for you and your special someone!  Pistachio Filling: * 500g @lacasadelformaggio Ricotta, drained  * 1/2 cup Icing Sugar * 1 Tsp Vanilla Extract * 1 Tbsp Thickened Cream * 1 Tbsp Pistachio Creme * Pre Made Cannoli Shells   * Pistachios, roughly chopped * Caster Sugar for dusting  Method: 1. Add all Pistachio filling ingredients listed above in a stand mixture and mix until all ingredients have combined.  2. As you can see in the video, I started to combine the ingredients with a whisk, but for a more smooth consistency, using a stand mixture is much more beneficial.  3. Transfer the pistachio filling in a piping bag, and pipe each cannoli shell until full on each end. I like to use a swivel motion in order to fill any air pockets and ensure the centre of each cannoli is full and not hollow.  4. Dip each end of the cannoli’s in the chopped pistachios, dust with icing sugar and enjoy!
