Kashmiri Pink Chai, also known as Noon Chai, is a traditional salted tea from Kashmir. It has a beautiful pink colour due to the reaction of green tea leaves with baking soda. Ingredients - 2 cups water - 2 teaspoons Kashmiri green tea leaves (or Chinese gunpowder green tea) - 1/4 teaspoon baking soda - 1/4 teaspoon salt (adjust to taste) - 1-2 cups cold water (for later) - 2 cups milk (can use dairy-free alternatives like almond or oat milk) - 2-3 crushed cardamom pods - 1-2 teaspoons sugar (optional, for a sweet version) - 5-6 almonds or pistachios, chopped (for garnish) Instructions 1. Boil the Tea Leaves - In a saucepan, bring 2 cups of water to a boil. - Add the Kashmiri tea leaves and baking soda. - Stir and simmer on medium heat until the water reduces by half and turns reddish-brown (about 10-15 minutes). 2. Cold Water Shock - Add 1-2 cups of cold water and whisk vigorously or aerate by pouring between two containers to develop the color. - Keep whisking for a few minutes until it turns a deep pink shade. 3. Add Milk & Spices - Pour in the milk, crushed cardamom, and salt. Simmer for another 5-10 minutes. - If you prefer a sweeter version, add sugar. 4. Serve - Strain the tea into cups. - Garnish with chopped almonds or pistachios. - Enjoy warm!
