@lauravel__: High Protein Pumpkin Muffins are a must try!🔥 Ingredients: 1 1/4 cups gluten-free baking flour blend 1/2 cup +2 tosp of pumpkin spice protein powder @Truvani 1 tsp pumpkin pie spice 1 tsp baking soda 1/2 tsp salt 1 can pumpkin puree 1/2 cup +2 tosp golden monkfruit sweetener (you can use coconut sugar or brown sugar) 2 large eggs 1/4 cup olive oil or avocado oil 1 tsp pure vanilla extract Method: Preheat oven to 375°F and grease a 12-cup muffin tin. Mix flour, protein powder, pumpkin pie spice, baking soda, and salt in a bowl. Add pumpkin, sugar, eggs, oil, maple syrup, and vanilla; stir until combined.
