an sia licenced secuirty person can use minimal force to detain if the alarms goes off. its under citizens arrest rules. detention is limited to around 2 hours. if police haven't turned up they must send them on their way.

Innocent until proved guilty, they have to provide the evidence you have stolen it and not you having to prove you bought it. Especially as the tills offer the choice of not having a recipe.
