@rad_pizzas: Neapolitan Style Pizza Dough 65% Hydration: 1000g - Pizza 00 Flour 650g - Cold Water 1g - Instant Dry Yeast 28g - Salt 1 - Hydrate the yeast 2 - Add flour and mix 3 - Add the salt 4 - Knead on a clean counter for 10 minutes 5 - Let it rest for 30 mins covered at Room Temperature 6 - Stretch and fold 7 - Let it rest for 90 mins at room temp 8 - Put in a fridge overnight for a bulk ferment 9 - Next day take it out the fridge 10 - Split into six 270g dough balls 11 - Leave the balls for 6 hours covered at room temperature 12 - You may put them in the fridge after step 11, just make sure you take them out for at least two hours before cooking. NOTE: The times for Room Temperature may vary depending on the weather. I've had to reduce the room temp times during the heat waves. Came here to say thanks, followed your recipe to the letter. worked out really well. we haven't had bases as good since Napoli. only thing, it was my first time using my Ooni Fyrer so almost lost the plot with it! I'm sure it's just a case of practising till I get it right with maintaining the heat. but we will stuck with your recipe 😋
