Soft, sweet, and sunshine in every bite. This lemon loaf is pure comfort with a burst of citrusy love. 💛 Ingredients: * 1 1/4 cups white granulated sugar * Zest of two lemons plus juice from two lemons (about 2 tbsp of lemon juice + 2 tbsp of lemon zest) * 1/3 cup sour cream, room temperature * 1/4 cup milk, room temperature * 3 large eggs, room temperature * 1/2 cup unsalted butter, melted * 1/2 tsp lemon extract, optional * 1 3/4 cups all purpose flour * 2 tsp baking powder * 1/4 tsp salt Lemon Glaze: * 1 1/2 cups powdered sugar * 1 1/2 tbsp lemon juice, I used store bought lemon juice * 1-2 tbsp milk * 1 tbsp melted butter * 1/2 tsp vanilla extract Bake Temperature: 350F Bake Time: 45-55 minutes, until knife or toothpick comes out clean Pan Type: Standard loaf pan 1. Preheat oven to 350F. 2. Mix your flour, baking powder, and salt. Set aside. 3. In a bowl, add your sugar and lemon zest. 4. Massage lemon zest and sugar to coat your lemon zest. This will bring out the lemon flavor of course! 5. Add your butter, milk, sour cream, lemon juice, and lemon extract (optional). Mix together with a whisk or hand mixer. 6. Add your eggs and mix in. 7. Now combine your wet and dry ingredients together with a spatula/whisk or your hand mixer until everything is combined. 8. Take your loaf pan and heavily spray with nonstick baking spray. 9. Pour your cake batter into pan. 10. Bang your pan to make sure there are no air bubbles in batter. 11. Bake at 350F for 45-50 minutes until a knife or toothpick comes out clean. 12. Once your loaf is done, let cool for 20-30 minutes before taking out of pan. 13. Let cool completely. 14. Once your loaf is cooled, start making your lemon glaze. 15. Mix your powdered sugar, lemon juice, melted butter, milk, and vanilla extract. 16. Pour your lemon glaze on top of lemon loaf. 17.
