@lifeofjessm: BLUEBERRY BREAKFAST MUFFINS 🫐 •••••••••••••••••••••••••••••••••••••• Cake for breakfast? Always a yes 🌟 These muffins are packed with protein and fibre 🌾 to keep you full and balanced. Soft, fluffy, and just right for a quick snack or grab and go breakfast 🧁🫐 INGREDIENTS: 300g full fat Greek yoghurt 80g maple syrup or honey 50ml skimmed milk 50g ground almonds 1 tsp baking powder 1 tsp bicarbonate soda 150g jumbo oats 100g wholewheat flour 2 large eggs 100g fresh blueberries METHOD: 1. Blend the Greek yoghurt and maple syrup together until smooth. 2. In a mixing bowl, add the ground almonds, oats, flour, pinch of salt, baking powder and bicarbonate. Mix then egg in the wet ingredients, the yoghurt blend, eggs and milk. 3. Fold together until combined but don't over mix. Fold in the blueberries. 4. Divide the mix between 12 muffin trays. Bake at 170c fan for 30 minutes until risen and golden brown. 5. Allow to cool for 15 minutes.
