It's called flehmening.. many animals do this to investigate surroundings or when tracking food or a mate. It's like smelling and tasting the air at the same time.

When the bull stops and turns its head he sees the dead bull they have on the ground a few feet away. The hiss was an aggressive posture towards the dead bull.
