CREAMY TOMATO SOUP✨🍅 It’s finally soup season and my creamy tomato soup recipe is too good not to try😮‍💨 here’s the full recipe👇🏽:  Ingredients 6 vine-ripened tomatoes, halved red onions, peeled & quartered 2 white onions, peeled & quartered 2 red peppers, deseeded & cut into chunks 2 bulbs garlic 2 tbsp olive oil 2 tsp smoked paprika 1 tsp dried oregano 1 tsp chilli flakes (adjust to taste) 1 tbsp tomato purée 1 tbsp brown sugar 800ml vegetable stock 100ml double cream (or more to taste) salt & pepper to taste Method 	1.	Roast the vegetables: Preheat oven to 200°C (180°C fan). Place the tomatoes, onions, peppers, and garlic bulbs on a baking tray. Drizzle with olive oil and season with salt, smoked paprika, oregano, and chilli flakes. Roast for 30–35 minutes, until soft and caramelised. 	2.	Build the soup base: Squeeze the roasted garlic cloves from their skins and transfer all the roasted veg into a large pot. Pour in the veg stock, any roasting tray juices, the tomato purée, and brown sugar. Stir well. 	3.	Blend until smooth: Use a stick blender (or transfer carefully to a jug blender) and blitz until silky smooth. 	4.	Simmer gently: Place the pot back on a low heat and simmer for 5 minutes, letting the flavours meld. 	5.	Make it creamy: Stir in the double cream, adjust seasoning to taste, and simmer for another minute. 	6.	Serve: Ladle into bowls, drizzle with extra cream and chopped corriander. Enjoy!
