@pinaskitchen: Polpettine Di Uova ❤️ Born out of necessity in Sicily, when meat was scarce and they had to come up with a meal for the Sunday. Now a cherished and flavorful tradition❤️ Ingredients For the polpettine • 6 eggs • 1/4 cup milk • 1 pinch salt • 1 tablespoon freshly chopped mint • 1 tablespoon freshly chopped parsley • 3 cups breadcrumbs (add gradually) • 3–4 tablespoons grated pecorino cheese For the sauce • 1 onion • 3–4 garlic cloves • Fresh basil leaves • Olive oil • Salt, to taste • 2 bottles Tomato passata (tomato puree. ⸻ Instructions 1. Prepare the mixture • Crack the eggs into a medium bowl and beat well. • Add the milk and salt, continuing to whisk. • Stir in the mint and parsley. • Add the breadcrumbs gradually, mixing as you go, until the mixture holds together but is not too firm. • Mix in pecorino cheese. 2. Shape the polpettine • Using two spoons, shape the mixture into small oval fritters. 3. Fry • Heat olive oil in a medium sauté pan over medium heat. • Fry the polpettine until golden brown on all sides. Remove and drain on paper towels. 4. Simmer in sauce • Gently drop the fried polpettine into your tomato sauce and cook for 15 minutes, allowing them to absorb the flavors. 5. My Sicilian family have a very similar recipe. They don’t use milk and use parsley instead of mint. Once they immigrated they added some chopped bacon or ham.
