chocolate almond croissant buns 🥐  INGREDIENTS  Brioche Dough  7 g instant yeast  30 g warm milk (90 F)  30 g granulated sugar  250 g bread flour  3 large eggs  145 g softened unsalted butter 1/2 tsp kosher salt  1/2 tsp vanilla paste  1/4 tsp almond extract  Almond Frangipan  56 g softened butter  65 g granulated sugar  1 tbsp orange zest  1/2 tsp vanilla paste  1/2 tsp almond extract  65 g almond flour  1/4 tsp salt Chocolate Filling 35 g dark chocolate bar  30 g butter  15 g powdered sugar  10 g cocoa powder  INSTRUCTIONS  1. Add sugar, yeast, and warm milk to stand mixer bowl and stir until combined. Add bread flour and salt. Add one egg at a time running mixer on low until dough starts to come together. Add in a few cubes of butter at a time and then knead at medium speed for 15-20 minutes until dough is smooth and tacky. 2. Place dough in a lightly oiled bowl and cover until doubled in size. 3. Prepare chocolate filling by melting chocolate bar and butter over a double broiler. Remove from heat and mix in cocoa powder and powdered sugar. Set aside until mixture has set.  4. Prepare almond frangipan filling by rubbing orange zest and sugar together. Add in butter and mix until light and fluffy. Add in vanilla paste, almond extract, eggs, and salt and whisk. Fold in almond flour until smooth.  5. Roll out dough in floured surface until you form a rectangle. Evenly spread frangipan and chocolate filling on 2/3 of the dough. Fold in 1/3 of the dough inwards, and then the other side - similar to folding a letter.  6. Roll out slightly with a rolling pin, then cut lengthwise with a pizza roller to create 6-8 strips.  7. Roll up strips tucking ends underneath. Place on a parchment lined baking sheet and cover loosely until doubled in size. 8. Brush with egg wash and sprinkle with sliced almonds. 9. Bake at 350 degrees F for 20-22 or until internal temperature is 190 F.  10.
