Save my 20 MINUTE BROWN BUTTER PUMPKIN ALLA VODKA w/butter toasted sage breadcrumbs for an easy fall weekday dinner!  Panko Breadcrumbs Ingredients 2 tbsp butter 1 cup panko breadcrumbs 8 fresh sage leaves chopoed ½ tsp salt ¼ tsp pepper Pumpkin Alla Vodka Ingredients 1 lb pasta of choice 3 tbsp butter ¼ cup olive oil 2 large shallots minced 3 cloves garlic cloves minced 2 tbsp tomato paste ¾ tsp salt ¼ tsp pepper ½ tsp nutmeg 1 ½ cup canned 100% pumpkin puree ¼ cup vodka ¾ cup heavy cream ¼ cup grated Parmigiano Reggiano cup pasta water To make the breadcrumbs add 2 tbsp butter to a small non-stick skillet and melt the butter over medium heat. Once the butter melts add the chopped fresh sage. Let the sage warm in the butter for about 30 seconds, then add the panko breadcrumbs, salt and pepper. Raise the heat to medium-high and toast the breadcrumbs until they are deep golden brown. Be sure to toss the breadcrumbs as they toast and then IMMEDIATELY transfer the breadcrumbs to a glass bowl once they are done. Bring a large pot of salted water to boil and begin cooking the pasta.  To make the sauce, add 3 tbsp butter to a large skillet and melt the butter over medium heat. Once the milk solids in the butter start to turn brown, lower the heat slightly and add the shallots and garlic. Sautee until the shallots are translucent, about 30 seconds, then mix in the tomato paste, pumpkin, salt, pepper, nutmeg, vodka and raise the heat back to medium. Let the alcohol in the vodka cook off, about 2 minutes, mix in the cream and the grated Parmigiano Reggiano and lower the heat.  At this point pasta should almost be done cooking. Reserve 1 cup of the starchy water and then strain the pasta. Slowly mix in the pasta water to thin the sauce, then mix in the pasta.
