Anne köftesi (aka mom’s meatballs in Turkish) is always something special🥹 Turkish cuisine has over 200 different types of köfte, but nothing compares to the nostalgic taste of your mom’s version. Every mom has her own little tricks, and here’s how mine makes hers (since so many of you asked!) She never measures anything, so everything is done by instinct - but for this batch I tried to write it down for you😋 She usually makes a big batch to freeze for later. First, she blends a big bunch of parsley, 4 large onions, and 2 cloves of garlic in the food processor — just enough so the onions don’t release too much juice. Then she adds about 2 kilos of ground beef, 2 eggs, and 2 cups of stale bread pieces (she always keeps some in the freezer just for köfte). For the spices she used Turkish “tatlı kaşığı”, which is bigger than the “çay kaşığı” (teaspoon), but in English I never saw the exact equivalent of tatlı kaşığı, so make sure you use a heaping teaspoon and cook a test meatball to make sure it is good for your taste! My mom added 2 teaspoons of paprika, 1 teaspoon of black pepper, 2 teaspoons of salt, 1 teaspoon of cumin, 1 teaspoon of baking soda, and if you like some heat as we do, 2 teaspoons of red pepper flakes. I always fry a small test piece first to check the flavors, but she never needs to, hers always turn out perfect. After mixing everything by hand, she gives the mixture a quick pulse in the food processor (about 10 seconds, in small batches) because she doesn’t have enough power to knead it longer. Then she shapes them into finger-length köftes (though you can also make them into little patties) and freezes them so they’re ready anytime. Grill them, fry them, or even pop them in the air fryer!
