@thehealchef: Good to be home for a little while, and nothing quite like a proper lasagne. For the Ragu (ingredients from @Waitrose & Partners) : 1 onion 2 carrots 2 celery sticks 4 cloves garlic 250g pancetta 1kg beef mince 1 tbsp tomato purée 1 glass red wine 300ml beef stock 2 tins chopped tomatoes (@Mutti Pomodoro) 2 bay leaves For the Béchamel 50g butter 50g plain flour 500ml whole milk 1 @Boursin Cheese Salt & pepper To Finish Lasagne sheets Shredded mozzarella Fresh basil Method Crisp up the pancetta, set aside. Brown the beef mince in the same pan until it sizzles and colours. Add onion, carrot, celery, garlic, and pancetta back in. Sweat for a few minutes. Stir through the tomato purée, cook for 2 mins, then pour in the red wine. Let the alcohol evaporate. Add beef stock, tomatoes, bay leaves (and parmesan rind if you have). Simmer gently for 1 hour. For the béchamel: melt butter, stir in flour, cook for 2 mins. Slowly whisk in milk until smooth, then melt through the Boursin. Season to taste. Build the lasagne: ragu → sheets → béchamel → mozzarella. Repeat layers. Bake at 200°C/400°F for 35 minutes until bubbling and golden. Rest 15–20 minutes before slicing. Enjoy!

Sir…soffritto…as the word indicates…is fried before the meat is put in. The veg need to soften before the meat is put in, I hope this helps 😅

YES! But it takes SO long. Every couple of months or so if I see a rainy morning forecast I’ll get on all the ingreds in and make a mega batch of ragu and freeze in portions. It’s multi purpose. All I have to do is make the bechamel if I’m in the mood for lasagna.
