Butter Pecan Fudge RECIPE-COOKING WITH BRIGHT EYES 1/2 cup butter plus 1 tbs 1/2 cup light brown sugar 1/2 cup sugar 1/8 tsp salt 1/2 cup heavy whipping cream 1 tsp vanilla 2 cups powdered sugar 1 cup pecans halfs -Line a 8x8 pan with parchment paper - In a frying pan add the 1 tbs butter and pecans heat about 5 to 7 min you'll smell the aroma of the pecans becareful not to over cook they will burn. Remove from heat and put in a bowl. Save a tbs or two for the top. - In a sauce pan add the sugars, the butter, and salt combine then and the heavy cream. Stir till melted and sugar is dissolved. Bring to a boil. Boil for 5 min stirring occasionally. - Remove from heat, let sit 10 min. - Add vanilla stir till combined - Stir in powdered sugar and stir till creamy add the pecans and fold them in. - Pour into the 8x8 pan and smooth out. Add the xtra pecans on top. - put in the fridge for a hour or 2 then remove from pan and cut to desired size.
