All of the potatoes in the grocery stores you are shopping at have potatoes from Washington and Oregon. Idaho farmers have very very large contracts with major companies like McDonald, and simplot that get all of our potatoes.

OK. This is the size of the potatos at the Hemlock for the baked potato bar. Cook it, cut the top, scoop out all the potato, mix it with your toppings, and put them back in. Bonus points for melted cheese on top ;) DO IT

Scrub, coat with olive oil and coarse salt, pierce in a couple of places, and bake at 350. that size might be 90 minutes to 2 hours cooking time. Serve with all the regular baked potato toppings and sides.
