@christinekase: Replying to @strong & courageous 🍅🥣 Roasted tomato soup —— - In a dutch over combine a variety of tomatoes; I used about 8 Roma tomatoes, cherry tomatoes on the vine, & a can of San marzano whole tomatoes - Add an onions; quartered - Drizzle with olive oil & season to taste - Roast with the lid on for about 45 mins at 375 - Once 45 mins is up take out of oven & transfer roasted tomatoes to blender & blend until the consistency you like. I like mine a little more chunky. This might need to be done multiple times to get it all. Alternatively you could use an immersion blender if you are using a metal pot as opposed to a ceramic dutch oven - Transfer soup back to dutch oven, add Parmesan rind, & 1/2 cup of broth. Let simmer for about 20 mins or while you make grilled cheese. - Turn off heat & add 1/2 cup of heavy cream - Top with a drizzle of olive oil & a little more heavy cream - Serve with grilled cheese & enjoy! 🍅🍅🍅🍅🍅 #tomatosoup #soupseason #fallsoup #souprecipe
