@cast_iron_chris: HELLUVA TRANSFORMATION! This carbon steel pan was absolutely disgusting with years of gross THICK buildup all over. There was so much buildup you could barely see the rivets and you couldn’t see the ‘fabrique en France’ on the handle. The lye bath made easy work of the buildup which gave us some satisfying peels. After the lye bath it went into the vinegar bath for rust removal (which there was some) which didn’t make it into the video. Carbon steel pans are incredibly smooth so they don’t respond as well to oven seasoning as cast iron. I ran it through 3 rounds of oven seasoning just to make sure the entire piece was seasoned- the handle, the outside, etc. I finished it off with a few rounds of stovetop seasoning which got the pan nice and dark. This was done to the cooking surface and the bottom only. Disgusting buildup IS NOT seasoning. It IS NOT character. IT’S NEGLECT. This pan has been brought back to life.
