Ingredients: 1 can, 155g 555 SARDINES TOMATO SAUCE or, WITH CHILI 1 large (1 ½ cups) talong, diced ¼ cup cooking oil 2 medium eggs, lightly beaten until frothy 1 tablespoon all-purpose flour, mixed with, 1 tablespoon cornstarch 1 medium (½ cup) onion, sliced in two To taste salt and pepper 1 clove (1 tsp.) garlic, minced 1 medium (1/4 cup) tomato, diced 1 teaspoon toyo 1 teaspoon calamansi juice Procedure: Open the can of 555 Sardines. Drain and separate the sauce from the fish. In a pan, heat oil and fry the eggplants until golden brown. Set aside to cool slightly. Reduce the oil in the pan, leaving 1 tablespoon for cooking the torta. In a medium bowl, mix well the eggs, flour, cornstarch, half of the onions, drained sardines, and fried eggplants. Season with salt and pepper to taste. Pour about ¾ cup of the mixture into the hot pan to cook one torta. Repeat until you make six tortasin total. Sauté garlic, tomato, and remaining onions in 1 tablespoon of oil until fragrant. Add the sardine sauce, soy sauce, and calamansi juice. Simmer briefly and serve with the tortas. Serves 5.
